l have a new-to- me Mitchell 340 reel which I took apart to clean and lubricate. The anti reverse spring & lever piped out and I do not know how to reassemble them. There is not much information about the 340 reel.

Welcome to the Forum.
I looked at a schematic and would assume it has 2 parts, actual Dog 81181 and spring 81188.
The dog goes on the small pin on case, then you position the spring from case to dog.
When you move the lever on out side of case it moves the drag off of the teeth on drive gear.
The spring puts pressure on dog to hold it down in anti reverse position.
I d not have a 340, but from repairing other models the dog reverse configuration is basically the same.
I can not accurately tell you exactly how it goes.

Hi, I always found schematics gave me a a idea how and where the pats fit in relationship to other parts which helped visually, unfortunately some moron wrecked this site that held schematics and other helpful things, try googling for a schematic for your reel, hope this helps.
